Ambition Professionnelle



Expert en Business et représentant du savoir-faire français dans l’art de la boulange et de la pâtisserie.
Polyglotte anglais, chinois, espagnol, spécialisé en développement commercial B2B.
J’ai plus de 5 ans d’expérience à haut niveau (avec des multinationales du « Fortune 500 » comme clients ou employeurs).
J’ai été formé au management en France, en Ecole Supérieure de Commerce (à Rennes). A terme, j'aspire à mener des projets de type :

  • Développer un nouveau marché (à l’étranger, ou en France)
  • Penser une gamme de produits et/ou des processus de fabrication plus rentables
  • Manager une structure, une équipe (recruter, faire monter en compétence, motiver)
  • Ou simplement mener un projet qui engloberait ces 3 aspects à la fois


J’ai pensé et mis en œuvre avec succès, plusieurs stratégies de développement commercial pour mes précédents employeurs.
Je suis aujourd’hui en train d’acquérir un savoir-faire technique.
Une expertise, aussi bien au niveau de l’organisation d’un site de production, que des méthodes de fabrication de différents types de pains et de pâtisseries.

L’idée est de devenir un élément polyvalent pour mon futur employeur.

Pour réaliser cette objectif, j’ai décidé de suivre une formation « CAP en alternance » (moitié en entreprise / moitié en école technique). J’effectue des stages au sein de différents types d’établissements : boulangeries modernes (Business model inspiré de la GMS), « Maisons » réputées, boulangeries semi-industrielles, traditionnelles. Et ce, dans différentes régions de France (Alsace et Pyrénées Orientales).

Je découvre de l’intérieur, les facteurs de succès, les méthodes de travail et les secrets de fabrication de ces différents acteurs.

Career Ambition



Expert in business and representative of the French know-how, in the art of Bakery and Pastry.
Polyglot French, Chinese, Spanish, specialized in B2B Business Development.
I have over 5 years’ experience at high level (with “Fortune 500 companies” as customers or employers).
I learned Management and Business Administration in a “Grande Ecole de Commerce”, which are the most prestigious schools in the field in France.
In a long run, I would like to lead projects such as:

  • Developing a new market (in France or Abroad)
  • Defining a more profitable range of products and/or a manufacturing process
  • Manage a Business Unit, a team (hire, motivate, train and up-skill people)
  • Or simply, leading a project that would encompass all these 3 aspects.


I have already drawn and implemented successfully, several business development strategies for my previous employers.
I am currently learning a technical know-how.
The idea is to build an expertise that will be valuable for my future employer.
An expertise both in terms of: organization of a production site and in the manufacturing methods of different types of breads and pastries. .

To reach this goal, I decided to enter a program (half in Pastry/Bakery school and half working in companies).
I am doing internships in various kinds of corporations: “Franchised bakeries” (business model inspired from the retail industry), “fine-art Pastry shop”, semi-industrial and traditional bakeries.
I am working, in different areas of France to analyze differences (Alsace and Pyrénées Orientales).
I am learning from within the key success factors, the manufacturing process and secrets, of all these different types of players.
